The shape of the still matters too. Tall stills with upward-angled lyne arms produce lighter, more delicate spirits (think Glenmorangie). Maturation does two things simultaneously. It subtracts and it adds.

After maturation, the whisky is bottled. Most single malt is chill-filtered and diluted to 40% or 43% ABV with distilled water. Chill filtration removes fatty compounds that can make whisky go cloudy when cold — it also removes some flavour and texture.

Non-chill-filtered whisky is bottled without that cold treatment. It may turn cloudy when you add ice or water, but it retains more body. Cask strength whisky is bottled at whatever ABV the cask reached during maturation — often 50-60% or higher. No water added, no filtration, maximum flavour.
